First Cuts

On Monday, I picked up eight banana boxes full of beef. The gross weight of the steer was 646 pounds and the net weight (what I brought home) was 456 pounds.

I paid sixty-eight cents per pound (on the gross weight) to have it cut and wrapped. I paid an $85 kill charge. Total was $528.28. I paid $500 for the steer initially. So it’s about $1000, not counting the cost of hay or any labor involved in taking care of it.

Last night, I had the first cut — T-Bone steaks. I was a little worried that a fully grass-fed steer would not have as much taste. At least, that’s what I had read. However, the steak was tender and tasty. And the smell of broiled steak, the sizzle, is just the best experience, which may be the cook’s special delight.
