Pickling

The pickling cukes are ready in the garden. I planted about seven plants this year after having only one this year. I have my work cut out for me making pickles. I like dill pickles.

Today I tasted a few of the pickles that I made on the weekend. The spears were a bit salty but very crunchy. These are the refrigerated fresh-pack. I also made a batch of sweet pickles, a nice combination of sweet and sour. They also have a nice crunch. It’s kind of amazing what vinegar and salt do to bolster the rather tender flesh of a cucumber. If you soaked them in water, they’d be like wet paper towels.
